Homemade Mint Simple Syrup Recipe – Quick way to use up your mint

I’ve been dreaming of summer lately, and nothing says warm weather quite like fresh mint. I can’t stop thinking of ways to use a mint simply syrup recipe, so buckle up for mint recipes!

If you grow mint in your home garden, you already know it can be a bit invasive, but that’s actually great news here! You can use that extra mint to whip up a quick simple syrup that works in so many different drinks.

How can I use mint syrup or mint simple syrup?

Don’t worry – I got you. I have light and clean mint sweet tea recipe, minty lemonade recipe, and even a virgin watermelon mojito and mint chip mocha recipe! OK, I have an alchoholic watermelon mojito recipe, too. Pull my arm!

Mint adds just the right amount of fresh, vibrant, cool flavor. While it’s amazing for summer, it’s also a highlight during the holidays when everyone is craving peppermint, so keep this mint simple syrup recipe in your back pocket for December and the Winter months, too!

This recipe only takes about 5 minutes on the stove, and you’ll get roughly 16 servings out of one batch since most drinks only need about two tablespoons of mint simple syrup.

I have to say, these fun drinks really deserve a nice display. I love high ball glasses (and own this set!) with some pretty stainless steel straws and a sprig of mint for an easy drink with some real pretty factor. Those are my affiliate links for products I own and use daily.

Step by step instructions for mint simple syrup

What You’ll Need

  • White sugar: 1 cup
  • Water: 1 cup
  • Fresh mint leaves: 1 cup, packed (or 2 cups if you want a really intense flavor!)

The Steps

Grab a small saucepan and add your sugar and water. Give it a quick stir.

Turn the heat to medium. You’ll want to stir it every minute or so for about 5 to 7 minutes until the sugar is completely dissolved and the liquid looks clear. Just be careful not to let it reach a boil!

It kind of looks like this when it’s not quite done:

It should look like this when finished:

Once it’s dissolved, turn off the heat immediately. Toss in your packed mint leaves and let them steep in the syrup for 15 minutes.

After 15 minutes, you can strain the syrup into a jar or just pull the leaves out. I like using a mason jar with a pour spout or a dedicated syrup jar. Pop it in the fridge, and you’re ready to go!

A beverage will need about 2 Tbsp of mint simple syrup for flavoring. But check out all of my own recipes using mint simple syrup here!

I’m curious to see if you prefer the 1-cup or 2-cup version of the mint leaves, so let me know in the comments which one you tried!
