This Dirty Watermelon Mojito is the perfect way to use up that Homemade Mint Simple Syrup while treating yourself to a cocktail that feels like a total vacation in a glass. It has that classic tart lime and cool mint profile, but with a creamy twist that makes it feel so unique.

- Add rum to your glass.
- In a blender, place the watermelon chunks and a splash of water. Blend until pureed.
- Add 2 oz of the watermelon puree to your glass. Drink the rest or save for later!
- Add simple syrup, then mint sprigs, if using.
- Add ice to mostly fill your glass, then add soda.
- Add lime juice and heavy cream. Gently stir in the cream.

Step by step instructions for dirty watermelon mojito
To start, you will pour two ounces of white rum into your glass. Then, take those fresh watermelon chunks and a splash of water and blend them until they are a smooth puree.
You only need about two ounces of the puree for your drink, so you can save the rest for a second round or just enjoy it as a little snack while you mix.
Next, add your mint simple syrup and some fresh mint sprigs if you are using them. Fill the glass most of the way with ice and top it off with your lemon lime soda.
To finish it off, add your fresh lime juice and a splash of heavy cream, giving it a gentle stir so everything looks marbled and beautiful.
