Twice Baked Potatoes

Creamy and bacony - this is the best way to use leftover baked potatoes

Ingredients
  

  • 3 baked potatoes
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese divided
  • 4 pieces of bacon chopped
  • 1/2 tbsp dried chives
  • 1 tsp salt
  • 1/4 tsp ground black pepper

Method
 

  1. Preheat oven to 400 degrees.
  2. Slice baked potatoes in half. Carefully scoop out the potato into a bowl, retaining the skins. Place the skins on a baking sheet.
  3. Using the back of a fork, mash the potato thoroughly.
  4. Add sour cream and 1/2 cup of the cheese. Add salt and pepper. Mix until combined.
  5. Carefully refill potato skins with potato mixture.
  6. Top with remaining cheese, chopped bacon, and chives.
  7. Bake for 10-15 minutes or until cheese is melted.

Notes

Note: To bake medium potatoes, clean potatoes, then use a fork to add holes. Roast at 400 degrees for 50-60 minutes, or until a fork is easily inserted in the center. 
Bacon note: I like to cook my bacon in the microwave when I only need a few pieces. Cover a microwave-safe plate with a paper towel, and lay 4 strips of bacon on top. Cover with a damp paper towel. Microwave on medium heat for 3 minutes or until they are cooked.
