Method
- Preheat oven to 400 degrees.
- Slice baked potatoes in half. Carefully scoop out the potato into a bowl, retaining the skins. Place the skins on a baking sheet.
- Using the back of a fork, mash the potato thoroughly.
- Add sour cream and 1/2 cup of the cheese. Add salt and pepper. Mix until combined.
- Carefully refill potato skins with potato mixture.
- Top with remaining cheese, chopped bacon, and chives.
- Bake for 10-15 minutes or until cheese is melted.
Notes
Note: To bake medium potatoes, clean potatoes, then use a fork to add holes. Roast at 400 degrees for 50-60 minutes, or until a fork is easily inserted in the center.
Bacon note: I like to cook my bacon in the microwave when I only need a few pieces. Cover a microwave-safe plate with a paper towel, and lay 4 strips of bacon on top. Cover with a damp paper towel. Microwave on medium heat for 3 minutes or until they are cooked.
