Thai Peanut Coleslaw

This Thai Peanut Coleslaw is a vibrant and crunchy side dish that brings authentic flavors to your table without the heavy fats of a traditional mayo dressing.

Ingredients
  

  • 1/2 head of cabbage green, red, or combination, or 14oz bag of shredded cabbage
  • 1/2 cup julienned carrots
  • 1/4 cup olive oil
  • 1 Tbsp soy sauce
  • 1 Tbsp maple syrup
  • 2 Tbsp peanut butter
  • 1 tsp rice vinegar or juice from 1 lime
  • 1/2 tsp grated ginger
  • Cilantro, peanuts and sesame seeds for garnish, optional

Method
 

  1. Shred your cabbage. I use a food processor, and it takes seconds.
  2. Place your cabbage and carrots in a large bowl.
  3. In a separate bowl, add oil, soy sauce, maple syrup, peanut butter, vinegar, and ginger.
  4. Whisk until the peanut butter is fully emulsified.
  5. Pour dressing over the cabbage and carrots.
  6. Stir until well mixed.
  7. Cover, and refrigerate for 1-4 hours.
