Method
- Shred your cabbage. I use a food processor, and it takes seconds.
- Place your cabbage and carrots in a large bowl.
- In a separate bowl, add oil, soy sauce, maple syrup, peanut butter, vinegar, and ginger.
- Whisk until the peanut butter is fully emulsified.
- Pour dressing over the cabbage and carrots.
- Stir until well mixed.
- Cover, and refrigerate for 1-4 hours.
Notes
You can certainly used bagged pre-shredded cabbage.
