Ingredients
  

  • 5 oz spring mix
  • 1/2 red bell pepper
  • 1/2 cup cooked corn cooled
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup pickled red onions see notes
Lime Vinaigrette
  • 1/3 cup olive oil
  • 1/4 cup lime juice 2-3 limes
  • 2 Tbsp sour cream
  • 1/4 cup cilantro chopped
  • 1/4 tsp dried oregano
  • 1/4 tsp salt

Method
 

  1. Whisk all dressing ingredients together in a bowl.
  2. Assemble salad and toss with dressing.
