Lemon Roasted Salmon

An elegant recipe for salmon, best for serving to company because of it's gorgeous appearance.

Ingredients
  

Salmon Filet
  • 1 wild caught salmon filet
  • 2 tbsp avocado oil divided
  • sea salt and cracked pepper to taste
  • 1/4 tsp dill weed
  • 1/4 tsp parsley
  • 3 lemons thinly sliced

Method
 

Prepare the salmon
  1. Preheat your oven to 425℉.
  2. Place parchment paper on a baking sheet.
  3. Rinse your salmon filet, and pat dry with paper towels. Place on the baking sheet.
  4. Brush 1 Tbsp. oil on salmon filet.
  5. Sprinkle the filet with salt, pepper, and herbs.
  6. Layer the thinly sliced lemons on top of the salmon.
  7. Brush the remaining oil on top of the lemons.
  8. Roast the salmon for 15 minutes or until the fish flakes away easily with a fork - you will remove a lemon slice to check for doneness.
