Anti-Inflammatory Air Fryer Zucchini

Delicious air fried zucchini that features anti-inflammatory spice turmeric

Ingredients
  

  • 2-3 zucchinis (3 if small and 2 if large)
  • 2 tbsp olive oil
  • 2 tbsp whole wheat breadcrumbs
  • 2 tbsp grated parmesan cheese
  • 1 tbsp whole wheat flour
  • ¼ tsp garlic powder
  • ¼ tsp turmeric powder
  • ¼ tsp paprika
  • ¼ tsp fine iodized sea salt
  • ¼ tsp ground black pepper

Equipment

  • 1 Air Fryer
  • 1 Air Fryer liner optional

Method
 

  1. Slice the zucchinis into ½" slices, then quarter the slices.
  2. Place the zucchini chunks in a medium glass bowl, add the olive oil, and stir to coat.
  3. In a small glass bowl, add the remaining ingredients, and stir.
  4. Pour the breadcrumb mixture on the zucchinis, and stir to coat.
  5. In an air fryer, place the zucchini pieces. Don't overlap. My 6-qt air fryer fit all of the zucchini, but you can cook in batches if needed.
  6. Set the air fryer to 400℉, and air fry for 9 minutes or until the zucchini is tender.
