How do I make crispy air fryer zucchini bites?
First, take 2 large or 3 small zucchini and quarter them. To do this, you will cut them in half lengthwise, then cut them in half lengthwise again. Place the zucchini quarters in a bowl.
Set your air fryer to preheat at 400 degrees. I use this large capacity air fryer for my family of 5. (That’s an affiliate link; I get a small commission at no cost to you.)

- Slice the zucchinis into ½" slices, then quarter the slices.
- Place the zucchini chunks in a medium glass bowl, add the olive oil, and stir to coat.
- In a small glass bowl, add the remaining ingredients, and stir.
- Pour the breadcrumb mixture on the zucchinis, and stir to coat.
- In an air fryer, place the zucchini pieces. Don't overlap. My 6-qt air fryer fit all of the zucchini, but you can cook in batches if needed.
- Set the air fryer to 400℉, and air fry for 9 minutes or until the zucchini is tender.
