Prepare your ingredients and zucchini noodles
Start by trimming the ends off your zucchini, then turn them into zoodles using a spiralizer or julienne peeler (affiliate link). Slice your roma tomatoes thinly, tear or chiffonade your fresh basil, and measure out your mozzarella pearls so everything is ready to go.
Warm the garlic in olive oil
Heat the olive oil in a pan over medium heat for three minutes. Add the minced garlic and saute for thirty seconds to a minute until it is fragrant, being careful not to let it burn.
Cook the zucchini noodles
Add the zoodles to the pan and sprinkle them with a quarter teaspoon of salt. Saute the zoodles while stirring constantly for about three to five minutes until they are softened but not mushy, then taste and add extra salt if desired.
Saute the tomato slices
