Ingredients
  

  • 6 baked potatoes
  • 6 Tbsp butter
  • 2 cups seasoned shredded chicken breast
  • 1/2 Chipotle BBQ sauce sub with favorite bottled sauce
  • 1/4 cup pickled sliced jalapenos
  • 1/2 cup pickled red onions
  • salt and pepper to taste

Method
 

  1. In a bowl, mix chicken breast and barbecue sauce. See meal prep notes if made in advance.
  2. Slice each baked potato in half.
  3. Add a tablespoon of butter, and use a fork to mash it into the potato.
  4. Salt and pepper to taste.
  5. Add 1/3 cup of shredded chicken to each potato.
  6. Top with pickled jalapenos and red onions.

Notes

Meal Prep notes:
If you made the seasoned shredded chicken breast in advance, to reheat, add in barbecue sauce, and cover chicken with a damp paper towel. Microwave for 2 minutes. Stir. Repeat in 30 second increments until desired temperature.
If you baked potatoes in advance, the best way to reheat is to make the slit, cover with a damp paper towel, and microwave for 2-3 minutes. If you have an air fryer and want crispier skin, microwave as above for 2 minutes first, then air fry for 4 minutes.
