Matcha Loaf Recipe – Easy and Adorable for Meal Prep or Gifts

But you don’t want to work hard, right?

Anyone who is a matcha fan needs to try this easy recipe for a matcha loaf bread. This recipe is so easy because it starts with one boxed white cake mix, AND

It makes two loaves of sweet matcha flavored bread. The matcha flavoring in this bread can be derived from any matcha powder, and when you cut it open, you get that BAM!

What does the matcha loaf taste like?

If you’re a matcha girly (or guy), you’re going to love this recipe. The quick bread tastes like a matcha latte! But the matcha flavoring is subtle. It’s not overpowering. It doesn’t have a earthy or grassy flavor. It’s slightly sweet and the beautiful green color is perfect for a holiday such as Christmas or Saint Patrick’s Day. This would be so cute wrapped up for Christmas because when you slice into the bread it is a vibrant bright green.

You can freeze one of the loaves and basically have a meal prepped breakfast, snack, or dessert! Or, like I said, you can save a loaf for gift giving. I love recipes that make me extra food and save me time in the kitchen.

In this recipe, I made a simple glaze that you can drizzle on the loaf. You can even drizzle the glaze on the loaf and then freeze it and it will hold up for you. Simply cool the bread, wrap in wax paper, and place in a freezer bag. If you don’t prefer to make the glaze or you just don’t have the ingredients on hand you can skip it, and the bread is still delicious without it.

Matcha Loaf with Glaze Quick Bread Recipe

Delicious sweet matcha loaf bread that makes 2 loaves, perfect for freezing or gift giving!

Ingredients
  

Matcha Loaf Bread
  • non-stick spray with flour
  • 1 box white cake mix
  • 1/2 cup vegetable oil
  • 1 cup sour cream
  • 4 eggs
  • 1.5 Tbsp matcha powder
Glaze
  • 1 3/4 cups powdered sugar
  • 1 Tbsp lemon zest optional
  • 2-3 Tbsp milk

Equipment

  • 2 8-inch loaf pans

Method
 

Prep
  1. Preheat your oven to 350 degrees.
  2. Spray your loaf pans with non-stick spray. I like the type that contains flour for non-stick. Alternately, you can spray the sides and line the bottom of the loaf pan with parchment paper.
Mix Batter
  1. In a mixer, add white cake mix, vegetable oil, sour cream, and eggs.
  2. Sift matcha powder into the mixing bowl.
  3. Mix on medium for 2 minutes, pausing to scrape down the sides.
  4. Pour half of the batter into each of two greased loaf pans.
Bake
  1. Bake both loaves at the same time for 25-30 minutes, or until a toothpick inserted comes out clean.
  2. Place loaves on a wire rack to cool for about 10 minutes while you make the glaze.
Make Glaze
  1. In a bowl, add powdered sugar and lemon zest, if using. Add 2 tablespoons of milk and whisk. If glaze is too thick, add another tablespoon of milk and whisk again. Repeat if necessary. I like my glaze to be drizzly.
  2. Pour or spoon glaze onto each cooled loaf. The glaze will set in about 5 minutes.

Notes

To freeze, let cool. Then, wrap in wax paper, place in a freezer bag, and freeze. Thaws in about 20 minutes on the counter.

Step by Step Matcha Loaf Recipe

Prep the Matcha Loaf

Prehat your oven to 350 degrees. Spray 2 8-inch loaf pans with non-stick baking spray.

In a mixer, add 1 white cake box mix. Do NOT add the suggested additions on the back of the box! Follow the rest of the recipe I have written, and add 1/2 cup vegetable oil, 1 cup sour cream, and 4 eggs.

Into the mix, sift matcha powder to avoid any clumps. This is my favorite matcha powder to use at home (affiliate link).

Mix on medium for 2 minutes, pausing to scrape down the sides.

Pour half of the batter into each loaf pan.

Bake the matcha loaves

Place in the oven side by side, but leave room for air to circulate between the pans. Bake for 25-30 minutes, or until an inserted toothpick comes out clean.

At this point, you might only see a little bit of green peeking through the golden top, but don’t worry! As I mentioned, the real magic happens when you slice into it and see that vibrant, bright green interior.

Cooling and Prepping the Glaze

Once they are out of the oven, move the loaves to a wire rack to cool for about 10 minutes. While those are cooling down, you can whip up the simple glaze.

Make the Powdered Sugar Glaze

In a small bowl, combine your powdered sugar and lemon zest. Add 2 tablespoons of milk and give it a good whisk. If the glaze feels too thick, just add another tablespoon of milk and whisk again.

This glaze is too thick for me, but you might like it that way:

I personally like my glaze to be very drizzly so it runs down the sides beautifully.

If you prefer a thicker icing, start with just 2 tablespoons of liquid and slowly add more until it’s exactly the consistency you want. If it looks too thick to pour, it needs just a touch more liquid!

The Final Touch Spoon or pour that glaze right onto each of your cooled matcha loaves. It should take about 5 minutes for the glaze to set. Once it’s ready, you have a treat that tastes just like a matcha latte—perfect for a snack or a beautiful holiday gift!
