This Greek Chicken Marinade uses only simple pantry staples like olive oil, fresh lemon, oregano, and garlic powder to transform ordinary chicken into something great. Plus, it’s quick!

  • White Meat (Boneless Breast): I recommend a minimum of 1 hour for boneless chicken breasts. If I am in a serious rush, I’ve gotten away with 30 minutes, but 1 hour allows the fibers to relax and absorb the citrus.
  • Dark Meat (Boneless Thighs): Chicken thighs have more flavor on their own, so they only need about 20-30 minutes minimum. They are more forgiving and less likely to dry out. They’re also super quick to cook, as evidenced by my Greek Chicken and Potatoes one pan dinner.
  • Bone-In Chicken (Any Cut): This requires the longest time. For juicy results with bone-in, I aim for at least 2-4 hours, or ideally, overnight in the fridge. This ensures the flavor penetrates deep into the meat near the bone.

This Greek Chicken Marinade is a zesty, high-protein essential that transforms basic poultry into a vibrant Mediterranean-inspired meal using simple pantry staples.

  • 1/4 cup avocado or vegetable oil
  • 2 Tbsp melted butter
  • 1/4 cup fresh lemon juice juice of one large lemon

  1. Add the ingredients to a bowl, and whisk.
  2. To marinate 1.5 – 2 pounds of chicken:
  3. Pour marinade over the chicken 1.5 – 2 pounds of chicken, cover, and place in fridge. Suggested minimum marinade time for dark meat is 20-30 minutes. Suggested minimum marinade time for white meat is 1 hour.

Step 1: Combine the oils In a clear glass bowl, combine your avocado oil and melted butter.

Step 2: Add the aromatics and seasonings Add in the dried oregano, garlic powder, salt, pepper, and a generous teaspoon of paprika.

Step 3: Add the acid Squeeze your lemon juice into the bowl.

Step 4: Whisk to Emulsify Whisk the ingredients vigorously until they are fully combined.

Step 6: Chill and Marinate Cover the bowl and place it in the refrigerator.

  • For Dark Meat: Minimum 20-30 minutes.
  • For White Meat: Minimum 1 hour.

How long is too long to marinate?
