Step by step instructions with pictures for Summer Shepherd’s Pie with Zucchini Cheddar Cornbread recipe

Prep the zucchini

Start by grating your fresh zucchini until you have a full cup. Place the shredded zucchini into a colander, toss it with a small pinch of salt, and let it sit to draw out excess moisture. After a few minutes, wrap the zucchini in a thin clean towel and squeeze out as much liquid as you can so your cornbread stays light and fluffy.

Brown the turkey and vegetables

Preheat your oven to 400 degrees. Heat olive oil in a large cast iron skillet over medium heat (affiliate link). Add the ground turkey, breaking it up with a spoon as it browns. When the meat is nearly cooked through, toss in the chopped onion, red bell pepper, garlic powder, onion powder, black pepper, and salt.

Cook until the onions turn soft and translucent, then stir in the frozen corn and cook for another three minutes before removing the pan from the heat.

Mix and top with cornbread

In a medium bowl, combine your squeezed zucchini, store-bought corn muffin mix, egg, milk, and shredded cheddar cheese. Stir the mixture until it is just combined.

Drop the cornbread batter by large spoonfuls evenly over the ground turkey filling.

Then use a spatula to spread it gently into an even layer.

Bake to perfection

Transfer the skillet directly to your preheated oven. Bake for 15 minutes, or until the top turns a golden brown color and a toothpick inserted into the center of the cornbread crust comes out clean. Allow it to cool slightly before serving hot straight from the skillet.

Slice and enjoy a one pot dinner!
